ELDERBERRY HOME REMEDIES
The hedgerows are full of ripening elderberries and now (Sept-Oct) is the perfect time to make your own cordial. Its a wonderful anti-viral remedy for warding off flu and helping with coughs and colds.You can take a tablesoon daily as a winter tonic.


Here is one of the many recipes available for elderberry cordial:

  • Pick newly-ripe heads on a dry day, enough to fill a large stainless steel or enamel pan. Many people leave the stalks on, but you can destalk with a fork. Add just enough water to cover the fruit and stew until soft.
  • Strain through muslin, squeezing well to get all the juice out.
  • To each pint of juice add 1lb (450g) granulated sugar and 10 cloves. Some recipes also add cinnamon. If you are planning to use the juice within a few days you could use less sugar.
  • Boil for 10-15 minutes
  • Cool slightly and pour into sterile bottles with screw tops, making sure you distribute the cloves evenly as they improve the keeping qualities.
  • Can be used immediately or stored for a year or more.
  • Take 1-2 tablespoons diluted with water. Traditionally taken at night with hot water as a cold/cough remedy.

If you feel like experimenting some more, elderberries can also be made into wine, jams, jellies, 'rob' and pies (with apple). There are lots of recipes on the internet and in old books.
